Italian sausage, potato & spinach soup

Ingredients
1 lb Hot Italian Sausage, pork 1 cup, chopped Onions, raw, diced3 clove Garlic, minced 5 medium (2-1/4" to 3-1/4" dia.) Potato, raw, diced 4 cups Chicken Broth2 cups water8 cup Spinach, fresh, washed and stems removed1/2 tsp dried Oregano1/2 tsp dried Basil 1/2 tsp Crushed Red Pepper Flakes2 tbsp Extra Virgin Olive Oil
Directions
Saute onion on medium with 1 T of olive oil
After about 6-8 mins, add ground pork/sausage removed from skins to the pan. Add 1T of olive oil if pork is lean
Cook until sausage is light brown. Add minced garlic and cook about another minute.
Add Chicken broth and water to the pot
Add diced potatos to pot and bring to simmer
Add spices to pot
Add Salt & pepper to taste
Simmer on medium for 15-20 mins until potatoes are tender
Add spinach to pot and cook 1 minute until wilted.
Eat with a sprinkle of parmesan cheese on top.
Cook 10-20 minutes unt
