veggie/scrambled egg

Ingredients
1 jumbo egg1 cup fresh or frozen vegatable(I like broccoli and cauliflower)1/2 cup brown rice1 slice american cheese ( or your fav)cooking spray
Directions
spray small 6" skillet with cooking spray and preheat. add veggies and cover. cook over low to medium heat until crisp/tender. while that is cooking slightly beat the egg and add a very small amount of water( this makes the egg fluffier than milk). when veggies are near done add fully cooked brown rice. heat through. push this mixture to the side and add the egg and scramble. when egg is done mix everything together and add cheese. cover until cheese is melted and serve immediately. add a slice of whole wheat toast and you have a complete meal.
