1 Tablespoon grapeseed oil2½ pounds ground beef(substitute ¾ pound cookedchopped chicken breast)1½ Tablespoons raw coconut aminos(substitute 3/4 teaspoon soy freefish sauce)3 Tablespoons lemon juice1 small yellow onion, diced (1 cup)2 cloves garlic, minced2 Tablespoon grated ginger4 carrots, cut in matchsticks (1½ cups)1 cucumber, diced (1½ cups)4 ounces spinach, chopped (2½-3 cups)¼ cup walnuts, chopped1 avocado, sliced6 tsp Raw Coconut Aminos
1. Heat a large non-stick skillet over medium heat and add oil. When oil is hot, add beef and cook until browned thoroughly, about 15 minutes. Add coconut aminos and lemon juice then turn off heat. Remove half the meat, cool, and refrigerate for Meal #5.
2. Turn heat back on. To the remaining meat, add onion, garlic, ginger, and carrots; cook for about 3 minutes.
3. Add cucumber and spinach, stir until spinach begins to wilt.
4. To serve, garnish with walnuts and avocado and serve with mango slices on the side.
Serving Size: Makes 4 1 cup servings
