Angelia's Cauliflower Fried Rice

Ingredients
3 cup Cauliflower, raw 2 tbsp Coconut Oil .25 cup, chopped Carrots, raw 1 large Egg, fresh, whole, raw 1 tbsp Kikkoman Lite Soy Sauce
Directions
Process cauliflower to rice sized grains. Heat coconut oil in pan. Add cauliflower and carrots and saute for 5- 8 minutes. Add soy sauce and mix well. Make well in center of pan and scramble and egg. Mix together with "rice".
