Teresa's Eggless Salmon Patties

Ingredients
2 cans pink salmon1 sleeve saltinesbasil (to taste)oregano (to taste)marjoram (to taste)black pepper (to taste)
Directions
Drain salmon and reserve juice. Crush crackers finely and add to salmon. Add in juice as needed to create moist handfuls that stick together.

Make 1/4 cup patties and cook on a lightly sprayed griddle until golden brown. Serve hot with lemon juice or dressing of your choice.

    Yes - a perfect plan-ahead for handy 100 calorie protein units. Two of them would make a 20-g. protein portion. Perhaps the extra portions could be frozen either unbaked or baked. - 5/20/08
