Roasted Baby Red Potatoes with Garlic and Thyme

Ingredients
1 1/2 pounds (1 pkg.) Melissa's Baby Red Potatoes 2 tbsp Trader Joe's Extra Virgin Olive OIl 1 tsp black pepper, freshly ground8 cloves of peeled garlic, chopped6 sprigs of fresh thyme, minced
Directions
Preheat oven to 425*F. Combine all ingredients in baking dish and mix well. Bake, uncovered for 10-15 minutes, or until potatoes are tender and browned. Gently stir once or twice during cooking. Remove from oven and serve warm. You may salt or use a no-salt or low-sodium seasoning to serve. The nutrition facts do not include this extra seasoning.
