Easy Lasagna

1 pound lean ground beef1 medium onion, chopped (optional)1 teaspoon basil1 teaspoon oregano1 teaspoon salt1/8 teaspoon garlic powder1/2 teaspoon sugar2 cups canned, diced tomatoes1 6-ounce can tomato paste1 cup water8 lasagna noodles, uncooked (can use wheat, or vegetable lasagna if you can find them)1 egg, slightly beaten1 tbls. dried parsley flakes2 tbls. parmesan cheese, grated2 cups fat-free cottage cheese1/2 cup finely shredded mozzarella cheese
Brown beef and nonion. Drain well. Stir in seasonings, tomatoes, tomato paste, and water. Mixture may be used immediately, but for richer flavor, simmer uncovered for 15-20 minutes. Stir occasionally. Mix egg, parsley flakes, parmesan cheese, and cottage cheese.
In a 9X13 inch baking dish layer 1 cup of sauce, 4 dry noodles (break to fit) and half of the cottage cheese-egg mixture, spreading it evenly over the noodles. Repeat the sauce, noodles, and cottage cheese mixture. Top with remaining sauce. Cover and bake in a 350 degree oven for 50-60 minutes, or until noodles are tender. Let stand 10 minutes. Sprinkle with cheese and serve. Makes 12 servings

THis is a fantastic recipe! Lasagna was SOOOO good!!! I used whole wheat noodles and they tasted exactly like regular noodles. I was afraid the low fat cottage cheese would make it taste healthy, but this lasagna was just like real lasagna. Very easy to make and absolutely delicious! - 9/25/08
