Asparagus Omelet

Ingredients
3 serving EggLand's Best - Organic - Large Brown Egg (by 2CHEEKYKIDS) 1 tbsp Smart Balance Buttery Spread 12 spear, medium (5-1/4" to 7" lo Asparagus, fresh 1 tbsp chopped Onions, raw .5 clove Garlic
Directions
Melt Smart Balance in skillet. Add chopped asparagus (1/2 inch pieces). Saute for 3-4 minutes on medium-high heat. Meanwhile finely chop onion. When asparagus is beginning to brown, add onion and minced garlic. Saute for 1 minute. Spread out mixture evenly in pan and pour 3 whisked eggs over it. Cook until firm. I use a spatula to cut this in half and flip the pieces over until there is no runny egg left.
