Roasted Red Potatoes

Ingredients
Red Potatoes (2-2.5 lbs)Garlic (4 cloves minced)Sea Salt (1 tsp)Black Pepper (.5 tsp)Extra Virgin Olive Oil (3 tbsp)Fresh Rosemary, minced (1 tbsp, minced)
Directions
Yields 8 servings
Preheat oven to 450 degrees
Clean and quarter potatoes, then steam on stovetop until tender, about 20 minutes.
While potatoes are steaming, add olive oil, salt, pepper, minced garlic and minced rosemary in a gallon-sized ZipLok. Squish bag to mix.
Add steamed potatoes to Ziplok and mix to coat well.
Pour onto cookie sheet (stoneware preferred) and bake for 20-30 minutes until golden.
**It's best to use red potatoes as they hold their shape better**

    Wow these were GOOD. I also skipped the steaming part, and just microwaved the quarters for 3 minutes before adding them to the oil mixture. I dipped them in 1 TBS. fat free sour cream mixed with chives....very rich and decadent without all the calories and fat. Great recipe! - 6/13/08

    These are really good and a healthy was to cook potatoes.
    I quarter mine place them on a microwave plate covered w/a wet paper towel and micro for 3 min. Than add to oil mixture and place in the oven or grill (wrap in foil). - 5/17/08

    I make this recipe as directed. It was fast, easy, and delicious. only thing that I would change is the amount of oil. I too agree that you could use half the amount as long ads you use a non-stick pan.
