Pineapple Icebox Pie

Ingredients
2 cup Dole - Crushed Pineapple in 100% Pineapple Juice 1 serving Food Club Coconut Cream Instant Pudding (Mix Only-Full Box) (by CHERRISH1972) 4 cup Whipped topping, frozen, low fat (like Cool Whip) .33 cup Granulated Sugar .33 cup Low fat cream cheese 16 tbsp Albertsons Fancy Flake Coconut sweetened (by CHUBBYCHUBBS) 2 pie shell (9" dia) Pie crust, graham cracker
Directions
Toast about a quarter cup coconut flakes. Mix pineapple (juice & all) and pudding mix together. Cream sugar & cream cheese. Combine the two mixtures and add un-toasted coconut. Fold in whipped topping. Pour the whole thing into 2 pie shells. Top with toasted coconut.
