Ranch Pasta Salad with grilled chicken

Ingredients
1 lb grilled chicken breast, flavored with your favorite marinade (about 4 breasts)7 oz (uncooked) barilla plus noodles1.5 tablespooon Hidden Valley Ranch seasoning3 tablespoons Hellmann's mayonnaise2 Tablespoon light sour cream1 tablespoon skim milk1.25 cup of frozen peas1 tablespoon Hormel Bacon Bits
Directions
Make pasta according to directions. Add frozen peas the last 3 minutes. While cooking prepare dressing. When pasta and peas are done drain and mix with chicken. (I use the heat of the pasta to re-heat the chicken.) Mix dressing and bacon bits.

Can add diced carrots or whatever else your family likes. I usually serve over a bed of spinach and chop up grape tomatoes.

Makes 8 one cup servings.

    I tried this b/c it was the bones i wanted to use to tweak a little. I used homemade mayo made with Olive Oil, and plain yogurt made from coconut milk instead of the sour cream. turned out really good (although I am not sure about the calories & such now :-) - 7/17/12
