HealthyLady's Tangy Asian Cabbage Salad

Ingredients
2 tbsp Citrus Ponzu (by REETAK) 1 tbsp Skippy Light Peanut Butter 2 tbsp Nakano Seasoned Rice Vinegar 4 lime yields Lime Juice 0.20 cup Trader Joe's Organic Dry Roasted Cashews 4 cup, chopped Cabbage, red, fresh 1 serving FRESH: Pepper, Sweet Red 1 3" by 1/4" Ring (by 75PERCENT) 1 tsp Ginger Root 6 tbsp Cilantro, raw 4 cup Cabbage, napa 1 tbsp Sesame Oil
Directions
Set aside a large salad bowl.
In a Magic Bullet or small blender cup add together lime juice, ginger, Ponzu, peanut butter, rice vinegar and sesame oil and blend till creamy. Pour mixture into salad bowl.
Thinly slice 4 cups of Napa Cabbage and 4 cups of red cabbage, wash and rinse and place in salad spinner.
Chop 1/4 cup of red pepper into small pieces.
Wash and rinse a 1/4 cup of cilantro.
Put all vegetables in bowl and toss until thoroughly blended.
Take 1 serving of cashews (about 14) and chop finely (or turn to rough powder in Magic Bullet). Put on top of salad and toss.
Enjoy!
Add protein as needed (chicken, tofu, beef) and enjoy!
