Cooking Light Jamaican-Spiced Chicken Thighs

1/4 cup red onion, chopped1 TBSP Granulated Sugar 1 Jalapeno Peppers, seeded and diced 2 tsp Cider Vinegar 2 tsp Soy sauce (shoyu), low sodium 1/2 tsp Salt 1/2 tsp Allspice 1/2 tsp Thyme, ground 1/2 tsp Pepper, black 1/4 tsp Pepper, red or cayenne 8 thigh, bone and skin removed Chicken Thigh
1. Combine all ingredients but chicken in a large bowl. Add chicken and toss to coat.
2. Heat grill pan over med-high, and coat pan with cooking spray. Add chicken and cook 4 minutes. Turn over, and cook 6 more minutes, or until chicken is done (165 internal temp).
Serving Size: Makes 4 servings, 2 thighs per serving
