Paleo - baked eggs with bacon, tomato, spinach, onion

11 large Egg, fresh, whole, raw 1 medium (2-1/2" dia) Onions, raw 2 cup Spinach, fresh 2 clove Garlic 6 serving Bacon, Apple Smoked, Uncured, Trader Joe's 2 tbsp Coconut Oil 1 medium whole (2-3/5" dia) Red Ripe Tomatoes
Preheat oven to 375.
Cook bacon. Reserve 1 tbsp bacon fat and spread all around pan and up sides. If you use the bacon fat, you only need ~ tbsp coconut oil (below).
Add coconut oil. Saute onion about 5-6 mins.
Add spinach and garlic. Saute 1 min.
Remove from heat and spread veggies on bottom of pan.
Mix 8 eggs and season with salt/pepper. (Leave 3 eggs whole).
Pour egg mixture on top of veggies.
Gently crack 3 remaining eggs on top, leaving yolk whole.
Add sliced tomato on top of eggs.
Bake ~15 mins until eggs are cooked. The 3 whole eggs should be set, but not overly runny.
Remove and let sit ~10 mins before eating.
