Flax Seed Nutty Muffins 2

3 cups Unbleached Flour1.5 cups Flax Seed Meal1.5 cups Oat Bran2 cups Splenda Brown Sugar Blend4 tsp Baking Soda2 tsp Baking Power4 tsp Cinnamon3 cups finely shredded carrots2 finely shredded green apples2 finely shredde pears1 cup chopped apricots1 cup dried pineapple1 cup chopped brazilian nuts1 cup pistachio nuts1 cup flax seeds4 medium eggs (Use substitute for vegans)1.5 cup milk (Use soy for vegans)4 tsp Vanilla1 cup wheat Germ
1. Mix dry ingredients in a large bowl
2. In a separate bowl mix wet ingredients
3. Incorporate wet ingredients into dry ingredients and mix unitil blended.
4. Fill up muffin cups (about 4 tbls. or a big serving spoon per muffin)
Place on oven warmed up to 350 F from 15-17 minutes.

Good muffins but a lot of work! So give yourself a few hours to prepare. I couldn't find Brazilian nuts so I used walnuts instead. And I completely forgot about the apricots but it was good anyway. This is a great snack or breakfast item packed with so many good for you things (fiber, omega-3). - 7/22/07
