Zucchini Potato Latkes

Ingredients
1 large (3" to 4-1/4" dia.) Potato, raw 2 cup, sliced Zucchini 0.5 large Onions, raw 2 large Egg, fresh, whole, raw 0.33 cup Bread crumbs, dry, grated, plain 2 tbsp Canola Oil 150 grams Carrots, raw
Directions
Grate the potato, zucchini, carrot, and onion. Combine with egg and bread, and season with salt and pepper. Form 12 balls, and fry 4 at a time in the oil, about 3 minutes per side. Serve w/ applesauce and sour cream!
