Creamy spinach soup

25 gram(s) Biona Coconut Oil 1 medium (2-1/2" dia) Onions, raw, diced1 clove Garlic, diced75 gram(s) Potato - raw weight, in small cubes250 gram Marigold vegan stock 240 gram(s) Asda Single Cream 260 grams Spinach, fresh
Saute onion and garlic in oil for 5-6 minutes. Add potato and cook for 1 minute. Add the stock and cook on medium for 10 minutes until the potato is starting to cook. Add the cream and bring up to a simmer, then add half the spinach. Cover and simmer for 15 minutes. Leave to cool for 5 minutes.
Pour into a blender and the rest of the spinach. Blend until smooth.
To serve, reheat with seasoning (salt, pepper, nutmeg).
