1 c basmati rice2 T ghee3 1" cinnamon sticks3 cardamom pods1 T golden raisins1 1/2 cup water1/8 tsp yellow food coloring (powder)10 blanched almonds, sliveredsyrup3/4 cup sugar mixed with 1/2 c water1/8 tsp yellow food coloring powderpinch saffron
clean, wash, and soak rice for 15 minutes.
In a heavy bottomed saucepan, heat ghee. Add cinnamon sticks, cardamom and raisins. When the raisins pop, add water and food coloring and drained rice. Cook on medium heat for approximately 10-15 minutes, until the water is absorbed.
Make the syrup by combining and heating sugar, water, food coloring and saffron. Once the syrup comes to a boil, lower heat and simmer for 5 minutes, wuntil slightly thickened and sticky. Add the syrup and almonds to the rice and cook, covered, on low heat for approx. 20 minutes until the water is absorbed and the rice is cooked, or place saucepan in a 300F oven until the rice is cooked.
Variation: 15 bites sized pieces of pineapple may be added ti the rice at the same time as the syrup. 1/2 cup pineapple juice may be used instead of sugar in the syrup.
