Sara's Cauliflower Mash - Faux mashed potatoes

Ingredients
1 head, medium (5-6" dia) Cauliflower, raw 1 cup Milk, 2%, with added nonfat milk solids, without added vit A 1 cup GREAT VALUE finely shredded sharp cheddar cheese 2 tbsp Butter, salted 2 tbsp Great Value 100% Parmesan Grated Cheese
Directions
Heat oven to 400 degrees. Remove leaves and stem from cauliflower, cut into pieces. Add cauliflower pieces to boiling water, boil for 15 minutes or until fork tender. Once cooked, drain water. Allow cauliflower to cool for 10 minutes. Now that it's cooled, add the cauliflower pieces to a blender or food processor. Add milk, butter, cheeses and any other spices (I use black pepper). Process until smooth and creamy. Add cauliflower mixture to a well greased 8x8 baking dish. Bake for 20-30 minutes, until edges are golden brown. Enjoy as a side or top with your favorite protein. Serving Size: 4 - 6 servings
