Blackened Tilapia

1 tsp Chili powder 1 tsp Garlic powder 1 tsp ground Cumin seed 1 tsp Onion powder 1 tsp Smoked Paprika 1 tsp Salt 1 tsp ground Coriander seed 1/4 tsp Pepper, black 14 oz package Regal Springs Tilapia Loins (4 loins) OR 4 tilapia fillets - 3 to 4 oz. each1/4 cup Coconut Oil
Thaw the fish.
Mix together all the spices. Heat a large skillet over medium high heat with the quarter cup of coconut oil in it.
Season each piece of tilapia with 1 scant teaspoon of the spice mix - rub it on with your hand - and place in the heated oil in the skillet. If there is any spice mix left, sprinkle it over the tilapia in the pan. Cook for 5 minutes on each side (less time if you used fillets, because they are thinner) until both sides are blackened, and the fish is cooked through.
