Grilled Asian Salmon and Brown Rice Pilaf

Ingredients
Brown Rice:1 TBS Olive Oil1/2 Med Onion chopped1/2 Red Bell Pepper chopped2 Cups Water1 Cup short-grain brown rice1/4 Cup fresh parsley finely choppedDash of black pepper~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~Salmon Ingredients4 skinless salmon filets skinless 4 oz each1 TBS Olive Oil1 Garlic Clove pressed or minced1 Tbs grated fresh ginger root1 tsp low sodium soy sauce1 tsp pure maple syrup2 green onion chopped
Directions
Rice directions: Heat oil in a medium saucepan. Add onion and bell pepper and cook 3 min. Add water and rice bring to a boil. Reduce heat cover and simmer 50 min. Fluff with fork stir in parsley. Season with pepper.
Salmon Directions: Place salmon in a shallow dish. Combine remaining ingredients, mix well and pour marinade over salmon. Let stand 20 min. Heat grill or grill pan. Discard marinade and grill salmon 3-4 min per side until salmon is opaque and firm to the touch.
