2 cup (not packed) Cottage Cheese, Nonfat 1 cup Flour - Gold medal all purpose flour 18 tbsp All Whites Liquid Egg White (3 Tbsp=1 large egg’s white) 2 tsp Baking Powder 1 cup Blueberries, fresh 2 tsp Vanilla Extract 2 tsp Diamond Crystal Kosher Salt
Mix all ingredients in a bowl and stir very well until fully incorporated. Scoop 1/4 cup servings of the mixture into a nonstick pan. Flip the pancake when the top starts to bubble. Makes 9 pancakes. Serve in stacks of 3. Top with your favorite toppings (this will add more calories)
