Carrot & Quinoa Feta soup

Ingredients
1 tbsp Olive Oil 1 medium (2-1/2" dia) red Onions, raw 2 clove Garlic 1000 grams Carrots, raw 1 tbsp Cumin seed 2 tsp Paprika .5 tsp chilli powder (by CYMRUGIRL1) 1 serving (OXO) Vegetable Stock Cube (by AUTUMNBIRCH) 100 gram(s) Quinoa, uncooked 1 tbsp (C) Vinegar, Red Wine (Gr Value) 100 grams Feta Cheese Parsley
Directions
Heat oil and add sliced red onion and crushed garlic.
After 2-3 minutes add small diced carrots and spices and fry 4-5 minutes.
Add 1 litre of stock made with cube. Simmer 10 minutes.
Cook the quinoa in this time. Reserve quinoa liquid.
Add vinegar to soup and blend. Mix in cooked quinoa and extra liquid if needed.
Crumble feta on top and parsley
