2 cup 365 Organic Quinoa 1 cup whole kernels Almonds, dry roasted (salt added) 1 cup Goya Black Beans 4 cup, chopped Kale 3 tbsp chopped Scallions, raw 8 tbsp Extra Virgin Olive Oil 12 tsp Lime Juice - ReaLime 100% Lime Juice 2 tsp Pepper, red or cayenne 2 tsp Cumin seed 2 tsp Salt 2 tsp Pepper, black .75 cup (not packed) Raisins 1 tbsp Cilantro, raw
Boil quinoa and raisins with 4 cups water. Let cool, consider refrigerating.
Add almonds.
Mix olive oil, salt, pepper, lime juice, and cayenne powder together separately, then stir into the quinoa.
Add chopped kale, scallions, and cilantro.
Add black beans.
Serving Size: 3 cups
