Creamy Pumpkin Bread

Ingredients
29 oz can of pure Pumpkin24 oz non-fat cottage cheese1 cup Splenda3.5 cups of low-fat Bisquick mix4.5 teas of Pumpkin Pie spice
Directions
Mix all ingredients together - don't overbeat. Spray a 9 x 13 baking dish & bake at 350 for 40-45 mins. Then, chill for best consistency and cut into chunks. Serves 30+

    Not too bad! Almost a bread pudding ours was so creamy! TI did use fresh pumpkin puree which tends to be wetter so I don't know if it was supposed to be that creamy, but we enjoyed it. It was different, satisfied a sweet tooth, and filled you up! - 11/7/07
