10 oz Boneless Skinless Chicken Breast - Raw (by LAURIE32) 1 large Onions, raw .5 head, large (about 7" dia) Cabbage, fresh 4 slices (6 per 6-oz pkg.) Canadian Bacon 4 large (3" to 4-1/4" dia. Baked Potato, with skin .25 cup (8 fl oz) Water, tap .5 tsp Onion powder 1.5 tsp Thyme, ground .5 tsp Salt .5 tsp Garlic powder 1 tsp Paprika .25 tbsp Pepper, black
Preheat oven to 375 F or 190 C
mix together rub ingredients
1/2 tsp of onion powder
1 1/2 tsp thyme
1/2 tsp salt
1/4 pepper
1/2 tsp garlic powder
1 tsp paprika
And roll chicken into rub, set aside
Fry chopped bacon, set aside and brown chicken in bacon grease
While chicken is browning roughly chop cabbage, slice onion and slice potatoes.
When chicken is done browning remove from pan, add cabbage to pan with 1/4 cup of water.
After a couple minutes add potatoes and onions
Remove from heat
Add bacon to cabbage mixture, then chicken on top.
Place in oven and cook til chicken is done aprox 40-45 mins
If you have a pan that is not large enough like myself after cabbage was cooked in pan for a few minutes I then transfered everything into a pot to put in the oven.
I also substituted the water with white wine (thinking of trying guinness next time)
Recipe is also good in a slow cooker, just fry bacon and brown chicken first
