All Time Best Remedy-Homemade Chicken Soup!

2 tbsp butter15 baby carrots, quartered lengthwise and chopped2 ribs celery, chopped into bite size pieces1 small onion, diced small4 cups low sodium chicken broth2 cups water1 chicken breast uncooked, not cut up6 oz dry egg noodles
Over med heat, melt butter in large pot. Add in chopped up veggies and saute until tender and onions are transleucent (aprox. 5 minutes). Pour in all broth and water and bring to a boil.
When water is boiling, drop in chicken breast. Lower temp to a simmer and let poach for about 20-30 minutes. After it has cooked, remove chicken, cut up into bite size pieces, then add back into pot. Let simmer another 10 minutes, then add in noodles. Add some fresh cracked black pepper to taste, and cook about 15-20 minutes more, and when noodles are soft, it's done! You may want to add more liquid, sometimes the noodles soak up quite a bit. You can add as much broth as you want to adjust level of soup-y-ness!
