Jim's Frittata

Ingredients
12 large Egg, fresh, whole, raw .75 cup, chopped Onions, raw 0.75 cup Bell peppers (Green, Red, Yellow, Orange) .50 cup, pieces or slices Mushrooms, fresh .75 cup, chopped or sliced Red Ripe Tomatoes .7 oz Mozzarella Cheese, part skim milk 1 tbsp Olive Oil
Directions
Scramble all eggs together. Chop vegetables ( expect tomato) and add to eggs. Use oil to coat the inside of a cast iron frying pan. Heat oven to 375. Place egg and vegetable mixture into pan and bake 5 - 10 min. Add tomatoes and top with cheese. Continue to bake another 20 - 30 min until eggs are cooked through.
