2 sweetpotato, 5" long Sweet potato 1 cup Beans, black 1 cup Beans, pinto 1 cup Chickpeas (garbanzo beans) 2 serving Yellow Bell Pepper, 1 serving equals 1.8 oz or about 10 strips 200 gram(s) bell pepper, red, sweet, raw 1 serving 1 Med. Green Bell Pepper 1 cup, chopped Onions, raw 1 package (10 oz) Mixed Vegetables, frozen 1 cup Beans, red kidney 2 clove Garlic 2 tbsp Chili powder .25 cup Olive Oil 1 tsp Cinnamon, ground
1. Pre heat oven to 180c/350f
2. Peel cut sweet potatoes into bit size pieces, drizzle with olive oil, sprinkle cinnamon and and hallf chili powder Set aside
3. In a large Pan or Pot add remaining olive oil. put onions, all the peppers/capsicum and garlic cook for 5 mins
4. Meanwhile put sweet potatoes in oven, cook til soft
5. add remaining chili powder to peppers/caspicum mixture cook for 5-7 additional mins (salt and pepper to taste)
6. Rinse and drain all beans, add to the pan or pot
7. Add the mixed vegetables
8. Add water to desired consistency
9. Cook for min 30min more if you like a thicker Chili
10. Stir in sweet potatoes
