Spinach Mushroom Fritatta

Ingredients
.375 cup Egg White--All Whites 100% liquid egg whites 1 cup Spinach, fresh 1 cup, pieces or slices Mushrooms, fresh 45 gram(s) bell pepper, red, sweet, raw 0.25 cup Red Onion Raw (1/4 cup, 40g or 1.4oz) 2 serving Green Onion (fresh-1 stalk) 1.5 oz Smoked Salmon (lox) 2 tbsp Basil 1 tsp Pepper, red or cayenne 1 serving 2 tsp Italian Seasoning (by JULIE1933) 3 tbsp balsalmic vinegar (by SUNSETINAZ)
Directions
Preheat oven to 350 degrees.
Spay a pan that can be put in the oven with a nonstick spray. Saute mushrooms in balsamic vinegar. Dice red pepper, red onion, green onion, and fresh basil and add to pan. When vegetables are almost done, add spinach to wilt spinach. Add red pepper seasoning and Italian seasoning.

Whip egg whites and a tablespoon of water until soft peaks occur. When vegetables are fully sauted, fold egg whites into pan and gently mix. put small pieces of smoked salmon on the top of the mixture. When the mixture begins to pull away from the pan and most or all of the liquid has evaporated, put pan in oven for 12 minutes.
