Low Fat Quiche

3 whole wheat tortillas3 whole eggs1 C. egg substitute1/2 C. skim milk1/2 C. low fat sour cream3/4 C. reduced fat cheddar cheese, shredded1 C. broccoli florets, fresh or frozen, thawed
Preheat oven to 350 degrees. Spray 9-inch pie plate with cooking spray. Overlap 2 tortillas and cut the third one in half to form a crust.
In a large mixing bowl, beat whole eggs and substitute with a fork or whisk until blended. Then mix skim milk and sour cream into eggs.
Add cheddar cheese and broccoli to blended egg mixture; combine thoroughly.
Pour egg mixture into tortilla-lined pie plate; bake for approximately 50 minutes. Allow to cool 10 minutes before slicing into portions.
