Crockpot Chicken Lettuce

Ingredients
2 large chicken breasts, raw 1/2 jar (about a cup) of salsa verde1 can (6 oz) tomato paste1 tsp ground cumin1 tbsp chili powder1 cup frozen corn1 can (15oz) black beans, drained and rinsed6 large romaine lettuce leavesSuggested toppings1 medium Roma tomato, chopped1/2 avocado, chopped1 bell pepper (any color), chopped
Directions
1. Place chicken, salsa verde, tomato paste, and spices in crockpot. Cook on low for 8 hours or until chicken is cooked through. Using a fork, shred the chicken and mix in the corn and black beans. Continue heating in crockpot for about 30 more minutes.

2. Serve chicken filling in a large romaine leaves and top with tomatoes, avocado, and chopped bell pepper, or any other desired toppings.

Serving Size: Makes about 6 large "tacos"
