Apricot Chicken Stir Fry

Boneless, skinless chicken breast cut in bite size pieces1 bunch Asparagus, cut bite size1 Zucchini, sliced2 cups Fresh broccoli, cut bite size1 Red Pepper, cut bite size4 Green Onions, sliced3 Cloves Garlic3 TBS Olive Oil, Halved3 TBS Soy Sauce1/2 Cup Sugar Free Apricot Preserves
Brown bite-sized chicken in half of the olive oil. Set Aside on plate.
In the other half of the olive oil, stir in garlic then add veggies and cook until crisp-tender. About 5 minutes.
In separate bowl, whisk together the soy sauce and preserves.
Once veggies are done, put chiken back in with veggies and add the soy sauce/preserve mixture. Stir until coated and serve immediately.
