Shortbread Cookies

.5 cup, unsifted Powdered Sugar 1.5 cup Flour, white .25 tsp Salt .5 tsp Vanilla Extract .75 cup Butter, salted
Place dry ingredients in food processor and pulse to mix. Add vanilla and pulse again. Cut butter into small chunks, add to food processor and process until dough forms.
Remove from bowl and flatten on a counter to approx 1/4 inch thick.
Cut into 2 inch rounds. Press the top of each round into granulated sugar to coat before placing on cookie sheet.
Prick each cookie with a fine tuned fork.
Bake at 325 for 30 minutes, turning the tray once.
