Parmesan zucchini frittata

Ingredients
2 serving Egg - Large (1 egg) 1 cup, sliced Zucchini 4 tbsp Parmesan Cheese, shredded 0.2 pepper Jalapeno Peppers Salt and pepper
Directions
Beat two eggs, add finely shredded or grated Zucchini , jalapeño, salt, pepper, and Parmesan cheese. Bake for 15 minutes at 375 degrees. For added yumminess, sprinkle a little Parmesan on the top during cooking to brown. Fill 12 muffins in a mini muffin pan. Serving Size: 12 mini muffins
