Ingredients
1 small Onions, raw 2 clove Garlic 1 cup, chopped Carrots, raw 4 cup, chopped Cabbage, fresh 1 cup Green Beans (snap) 2 pepper, large (3-3/4" long, 3" dia) Yellow Peppers (bell peppers) 6 cup Beef Broth - Swanson Low Sodium 1 Serving(s) Hunts tomato paste 7 serving(s) Hunts diced tomatoes no salt added 1 serving equals 1/2 cuo 0.5 tsp Thyme, ground 0.25 tbsp Basil 2 cup, chopped or diced Broccoli, fresh 2 cup, sliced Zucchini
Directions
In a large pot cook onion and garlic on medium heat until soft. Add carrots, cabbage and green beans and cook for an additional 5 minutes Stir in bell pepper, undrained diced tomatoes, broth, tomato paste, bay leaves and seasonings. Simmer 6 to 7 minutes Add in zucchini and broccoli. Simmer an additional 5 minutes or until softened Remove bay leaves before serving
