Hearty Tex-Mex Casserole

Ingredients
1 10oz pkg frozen chopped spinach, thawed3 Medium, Yellow squash, thinly sliced1 Large, Red or green bell pepper, 1/2 inch pieces1 Onion chopped3 Cups Boca Ground Burger (or use Chicken or Turkey)12 6-inch corn tortillas1 10 3/4 oz can cream of celery soup, undiluted1 - 8 oz Container low-fat sour cream1 - 8 oz Jar picante sauce1 - 4.5 oz can chopped green chilies, undrained1 - 1.4 oz envelope fajita seasoning2 Cups Shredded low fat cheddar cheese, divided
Directions
Drain spinach well, pressing between paper towels; set aside
Saute squash, bell pepper, and onion in a large skiller over medium-high heat for 6 minutes or until tender. Remove from heat.
Stir in spinach, ground boca burger, 1.5 cups of cheese, and the rest of the ingredients.
Spoon into lightly greased 13x9 inch baking dish.
Bake at 350 for 30 minutes. Sprinkle remaining 1/2 cup chees and bake 5 more minutes.
