Zucchini Bake

Ingredients
5.0 tbsp Parmesan Cheese, shredded2.0 tbsp Olive Oil5.0 cup, sliced Zucchini5.0 plum tomato Red Ripe Tomatoes1.0 cup Bread crumbs, dry, grated, seasoned2.0 cup Colby and Monterey Jack Cheese shredded
Directions
Cook zuccini until tender Mix all ingredients except oil and saving out some jack cheese for topping. Spead oil in 2 quart baking dish then top with zucchini and tomato mixture and remaining cheese. Bake at 350 until cheese starts to brown and bake is bubbly. About 30-40 minutes 6-8 servings. Serving Size: Makes 8 servings
