1 Serving(s) LeoDora Vegetarian Street Tacos 2 serving Sweet Potatoes, Baked (One potato) 2.5 serving Bushs Black Beans 1 package (10 oz) Spinach, fresh 1 cup, chopped Onions, raw 1 tbsp Chili powder 1 tbsp Cumin seed 1 tbsp Paprika 1 pepper Jalapeno Peppers 24 serving El Pollo Loco, 4.5 corn tortilla 3 clove Garlic 100 grams Cilantro, raw
Chop up onion, keep a little to the side for a topping if desired
Chop up garlic - three cloves
Chop up jalapeño
Medium heat with a TBLS olive oil - big pan
Throw in pan
Cook 3 min
Add cumin, paprika, chili powder, salt, pepper (to taste)
Cook 2 min and add 1/2 c water
Chop sweet potatoes (to speed things up, I get them preschopped and microwave them for five min until soft but slightly firm)
Throw in pan, stir around
Cook for 5 min
Add can of black beans, stir around
Chop spinach, add, stir around, just until wilted
Scoop about a 1/4 cup maybe a bit less into three tortillas
Top with raw onion and cilantro and some salsa and cheese, if desired
