Cheesy garlic parmesan spinach spaghetti squash

4.0 cup Spaghetti Squash0.5 tbsp Extra Virgin Olive Oil1.0 cup Spinach, fresh0.5 cup, whipped Heavy Whipping Cream1.0 tbsp Cream Cheese0.5 cup Parmesan Cheese, grated1.0 oz Mozzarella Cheese, part skim milk
Cut squash in half, rub inside with olive oil, salt and pepper, cook upside down for about 40 mins.
When squash is roasting, start sauce.
Heat olive oil, saute garlic (2.5 T) until fragrant. Next add spinach until wilted, add cream cheese, parmesan cheese and stir well. Season with salt & pepper. Once squash is roasted, let cool and use fork to.separate and fluffy the strands of spaghetti squash. Pour sauce over each half store to.mix and top with a little mozzarella cheese. Bake 350 degrees for 20 minutes.
