Pistachio Cardamom Energy Bars

4 1tsp Coconut Oil .5 tsp Vanilla Extract .5 tsp Cardamom, ground 8 serving Bard Valley Medjool Dates (2 dates) 1 cup Pumpkin Seeds (whole seeds, roasted) 1 cup Pistachio Nuts
1. Process Pistachios, pumpkin seeds, and salt in a food processor. 2. Add the rest of ingredients and process until it sticks together.
3. Line a 9x5 in. pan with a greased piece of parchment paper. Firmly press the mixture into the pan and refrigerate until firm.
4. Pull bars out by parchment paper and into 8 equal sized pieces.
