Nicky's Potato Salad

6 Yellow Potatoes-1 medium potato (5.3 oz.) 3 serving Egg Whites, large 8 serving Green Onion (fresh-1 stalk) 4 tbsp Signature Kitchens Sliced Ripe Olives 1/2 cup Duke's Light Olive Oil Mayonnaise 3 tsp Maille Dijon Originale Mustard 4 tbsp Mt. Olive Dill Relish 3 tbsp Parsley, dried To taste: Lemon pepper, sea salt, pepper, onion powder and/or smoked paprika.
Boil three eggs, peel them after cooling. Set a pot of salted water on Medium High to boil.
Clean, peel and chop potatoes. Add potatoes to boiling water.
Pierce a potato with a fork to test after 10 minutes. If fork enters potato without difficulty, the potatoes are done. Drain potatoes and set to the side.
Add diced egg whites and green onions to a large mixing bowl with olives, mayonnaise, mustard, relish and spices to taste.
Serving Size: 1 cup
