Diner Meat Loaf Muffins

Ingredients
1 tsp olive oil1 cup finely chopped onion1 cup finely chooped carrot1 tsp dried oregano2 garlic cloves, mineced1 cup ketchup, divided1 1/2 pounds groud beef, extra lean1/2 cup bread crumbs2 tlbs mustard1 tsp worcestershire sauce1/4 tsp black pepper2 egg whitesCooking spray
Directions
Preheat oven to 350 degress.

Heat the olive oil in a large non stick skillet over medium high heat. Add onion, carrot, oregano and garlic, saute for 2 minutes. Cool

Combine onion mixture, 1/2 cup ketchup and the remaining ingredients except cooking spray in a large bowl.

Spoon the meat mixture into 12 muffin cups coated with cooking spray, top each with 2 tsp ketchup. Bake at 350 degrees for 25 minutes or until a thermometer registers 160 degrees. Let stand for 5 minutes.
Makes 6 servings (serving size is 2 muffins)

    I made this last night and it was FABULOUS! I substituted zesty italian pasta sauce for ketchup. The Cooking Light website had this recipe at 276 calories per serving. - 11/6/09
