Rhubarb Muffins

Ingredients
1/2 cup oil2 eggs (large)1 tsp vanilla5 cups flour2 tbsp. baking powder1 tsp salt4 cups diced rhubarb1 1/2 cups sugar2 cups skim milk
Directions
mix oil and milk together add eggs and mix together, add vanilla, salt, baking powder, flour mix, fold in rhubarb.
Fill muffin tins 3/4 full.Bake at 375 for 17-23 minutes. makes 24 muffins. If wanted sprinkle with cinnamon sugar on top before baking (adjust calories if added) I hope that you like these they are filling.
