Hearty Healthy High Protein Vegan Soup

Ingredients
Chop all ingredients in the order you like and throw them in the pot with 5 liters of water. Toss in any spices you like. I use tumeric, rosemary, parsley, salt, pepper, and chilly powder. It is helpful to soak the lentils, barley and quinoa over night or until sprouted, but it is not necessary. Ingredients:Pumpkin or butternut squash Onions or shallotsGarlic or garlic powderLentils of any colourBarley or MilletQuinoaBroth or cubes (vegitable, onion, or chicken)Red and green bell peppersCeleryWaterBring to a boil and simmer for a minimum of 30 minutes, but up to 2 hours. The longer you simmer it, but more the flavor will come out. Note: If you don not soak, simmer for an hour or more.It's really tasty! ENJOY!!!

Makes 8 servings of 1.5 cups. Reduce the recipe as desired.
