Super Easy Low Carb Eggplant

1 eggplant, unpeeled (approx 1-1/4 lb), fresh1/4 cup almond flour1/4 cup Parmesan Cheese, grated1/3 cup mayonnaise1/4 tsp black pepper
Wash and dry outside of eggplant. Slice into 12 rounds of equal thickness.
Line a baking sheet with parchment paper or foil. Preheat oven to 350°F.
In a bowl combine almond flour, cheese and pepper. Break up any lumps. In a separate, smaller bowl place mayo.
Brush one side of eggplant with mayo and press into almond flour mixture. Turn slice over and repeat. Place on lined baking sheet. Repeat with remaining slices.
Bake 20 minutes, turn; bake additional 20 minutes. Let cool a bit before serving. Store leftovers in an airtight container in the refrigerator
