Ingredients
6 carrot (7-1/2") Carrots, raw 7 stalk, large (11"-12" long) Celery, raw 1 serving 1 Med. Green Bell Pepper 2 medium (approx 2-3/4" long, 2-1/2" dia) Peppers, sweet, red, fresh 6 large Mushrooms, fresh 3 medium (2-1/2" dia) Onions, raw 4 clove Garlic 0.5 head, large (about 7" dia) Cabbage, fresh 7.5 cup Kirkland organic Chicken broth no salt added 3.25 cup Diced tomato Unico 3.25 cup Red Pack Whole Peeled Plum Tomatoes
Directions
Chop all ingredients. Heat oil in large pot. Sweat onions and garlic. Add rest of vegetables one at a time stirring all the time. Add tomatoes and broth. Mix minestrone enveloppe with 4 cups of water and add to soup. Add spices to taste. Serving Size: 3-1/2 cups
