Light Chicken Salad

Ingredients
0.25 cup Mayonnaise, regular (mayo)1.0 thigh, bone and skin removed Chicken Thigh2.0 stalk, large (11"-12" long) Celery, raw0.5 cup, chopped Onions, raw2.0 tbsp Claussen Sweet Pickle Relish1.0 serving Apple, Gala (medium)1.0 serving Baked Chicken Breast, skinless (1 breast)0.5 cup Grapes - red or green - 1 cup40.0 gram(s) bell pepper, red, sweet, raw0.25 cup fat-free yogurt2.0 oz Walnuts
Directions
Skin breast and thigh and bake until done about 30/40 minutes. Dice the onion, celery, bell pepper, apple and slice the grapes, add them to the mixing bowl. Mix in a quarter cup of regular mayonnaise (substitute low-fat if desired) and a quarter cup of sour cream along with two tablespoons of sour cream. After the chicken cools, shred it and add it along with the sweet pickle relish combining well. I add some ground cardamom, onion powder salt and pepper to taste. Top with walnuts and Enjoy Serving Size: 1 cup
