Thai red curry sauce

Ingredients
400 grams Coconut milk lite 1 tbsp Thai red curry paste 1 serving 1 Med. Green Bell Pepper 1 cup Red Onion Raw (1/4 cup, 40g or 1.4oz) 1 tbsp Fish Sauce 1 tbsp Soy Sauce
Directions
Bring coconut milk to a simmer, add curry paste, fish sauce, soy sauce, onion, and pepper. I also add fresh basil leaves and one star anise pod. Let simmer for 30 minutes, veggies should be soft. Serve over meat, tofu, fish, rice, other veggies...
