3 cup Quaker Oatmeal-- Old Fashioned Quaker Oats 2 tsp Leavening agents, baking powder, low-sodium 1 tsp Cinnamon, ground 1.5 cup blueberries, dole frozen blueberries unsweetened unthawed ***see additional notes/tips1.25 cup Silk Pure Almond Milk - Unsweetened Vanilla Almond Milk ***see additional notes2 large Egg, fresh, whole, raw 4 tbsp Maple Grove Farms 100% Pure Maple Syrup (1/4 cup) ***see additional notes/tips2 tsp Vanilla Extract 180 grams Cottage Cheese, Nonfat (3/4 cup) ***see additional notes/tips
Preheat oven to 375 degrees F. and spray a baking dish (8x11 or 9.13 depending on what you have) with a natural cooking spray. If you would prefer your baked oatmeal thicker, use the smaller sized baking dish.
Combine dry ingredients (oats, baking powder, cinnamon, salt) in a large bowl. Toss in blueberries. Allowing the blueberries to be covered by the oat powder will help them from sinking to the bottom of the mixture.
Stir in the rest of the ingredients (milk, beaten egg, vanilla, maple syrup, cottage cheese).
Transfer oatmeal mixture to baking dish.
Cover baking dish with foil and bake at 375 degrees F. for 30 minutes. Remove the foil and bake for another 15-20 minutes.
OPTIONALl: Serve with fresh blueberries and a splash of milk. This oatmeal is not overly sweet so you may wish to add a packet of sweetener to your serving of oatmeal
